CHOCOLATE CHERRY THUMBPRINTS

Preheat oven to 350°F. Microwave 1 cup morsels in small microwave-safe bowl on high power for I minute; stir. Microwave an additional 10-20 second intervals, stirring until smooth. Cool at room temperature. Combine oats, flour, cocoa, baking powder and salt in medium bowl. Beat granulated sugar, butter, eggs and vanilla in large mixing bowl until smooth. Beat in melted chocolate. Stir in oat mixture. Cover: chill dough for 1 hour then shape dough into 1 inch balls. Place 2 inches apart on an un-greased baking sheet. Press centers with thumb. Place maraschino cherry into each centre. Bake for 10-12 minutes or until set. Let stand 2 minutes, remove to wire rack to cool. Melt remaining morsels, drizzle over cookies. Makes 4 dozen.

 


2 cups (12oz package) Semi sweet chocolate morsels, divided
1 ¾ cups Quick or old fashioned oats
1 ½ cups all purpose flour
¼ cup baking cocoa
1 teaspoon baking powder
1/4 teaspoon salt (optional)
¾ cups granulated sugar
2/3 cup butter or margarine (softened)
2 eggs
1 teaspoon vanilla
2 cups (two 10oz. jars) maraschino cherries, drained and patted dry

CHOCOLATE SNOWBALLS
Cream butter, sugar and vanilla together. Mix in - - flour, cocoa and pecans. Shape into 1 inch balls. Put on un-greased cookie sheet. Bake at 350~’F for about 20 minutes.
When they are cool enough, roll them in icing sugar.

1 ½ cups ground pecans or walnuts

BRUSCHETTA CHICKEN BAKEPrep Time: 10 min, Ready In: 40 min, Serves: 6
Preheat oven to 400°F. Place tomatoes with liquid in medium bowl. Add garlic and stuffing mix; stir just until stuffing mix is moistened. Set aside~ Place chicken in 13x9-inch baking dish; sprinkle basil and cheese.
Top with stuffing mixture. Bake 30 mm. or until chicken is cooked through.
To round out the meat serve with steamed Italiar style vegetables.

 

 




1 can (19 fl oz/1540 mL) Aylmer Accents
Italian Stewed Tomatoes, undrained
2 cloves garlic, minced
1 pkg. (120 g) Stove Top Stuffing Mix for Chicken
1 1/2 lb. boneless skinless chicken breasts, cut into bite-sized pieces
1 tsp. dried basil leaves
1 cup Kraft Mozzarella Shredded Cheese
