Sauté onions and rice in olive oil until rice is golden and oil is absorbed. Add saffron, garlic, broth and stir well. Then cover and cook gently until rice is tender and broth is absorbed. Add cheese and serve.

¼ cup chopped onions
1 cup uncooked rice
¼ cup olive oil
1 tsp. saffron
½ tsp. garlic powder
2 ½ cups chicken broth or beef
Salt and pepper
1/4 - 1/2 cup parmesan cheese

Cut potatoes in half lengthwise, then cut into 2 inch pieces. Place in an ungreased 8 inch baking dish. In a saucepan combine all ingredients (not walnuts). Cook over medium heat stirring til and bubbly. Pour over potatoes-sprinkle with nuts. Bake uncovered at 350°F for 25-30 minutes.

4 Medium sweet potatoes (yams) peeled
1 cup Orange juice
½ cup Packed brown sugar
¼ cup Raisins
2 tbsp. Butter
I tbsp. Cornstarch
¼ tsp. Salt
3 tbsp. Chopped walnuts or pecans

Mix chicken and next 7 ingredients. Form into 4 large patties. Heat oil. Cook 6 minutes per side
