Place half of the ham in a 2-quart casserole. Cover with half of the potatoes and half of the onion. Stir half of the flour over; season with salt and pepper. Repeat layering ham, potatoes, and onion. Season with additional salt and pepper. Sift remaining flour on top. Pour milk over all. Bake, covered, in a 350° oven for 1 hour to 1 1/4 hour or until potatoes are nearly tender. Uncover. Combine bread crumbs and melted butter; sprinkle on top of the casserole. Top with parsley. Bake 15 minutes more. Serves 4 to 6.
Variation: Place grated cheddar cheese between layers. Mix some grated cheddar cheese with bread crumbs and butter before baking for last 15 minutes.

6 medium Potatoes, peeled and thinly sliced
1/4 cup Finely chopped onion
1/3 cup all-purpose Flour
2 cups Milk
3 tbsp Dry bread crumbs
1 tbsp Butter or margarine, melted
2 tbsp Finely snipped parsley (optional)
